200g pasta (spaghetti or fettuccine)
2 tbsp butter
3 cloves garlic, minced
1 cup mushrooms, sliced
½ cup heavy cream (or coconut cream for vegan)
½ cup grated Parmesan (or nutritional yeast for vegan)
Salt & pepper to taste
Fresh parsley for garnish
Directions
- Cook the pasta: Boil water, add salt, and cook pasta until al dente. Reserve ½ cup pasta water. Drain and set aside.

- Prepare the sauce: In a pan, melt butter and sauté garlic until fragrant.

- Add mushrooms: Stir in sliced mushrooms and cook until softened.

- Combine ingredients: Pour in heavy cream, reserved pasta water, and Parmesan. Stir well.

- Toss in pasta: Add cooked pasta to the sauce and mix until coated. Season with salt & pepper.

- Serve: Garnish with fresh parsley and extra Parmesan. Enjoy!
