📝 Ingredients:

  • 1 ½ cups (190g) all-purpose flour

  • 1 ½ tsp baking powder

  • ¼ tsp salt

  • ½ cup (115g) unsalted butter, softened

  • ¾ cup (150g) sugar

  • 2 large eggs

  • Zest of 1 large orange

  • ¼ cup (60ml) fresh orange juice

  • ½ cup (120g) plain yogurt

  • 1 tsp vanilla extract

👨‍🍳 Instructions:

Step 1: Prep and Preheat

  • Preheat oven to 175°C (350°F). Grease and line a loaf pan or round cake pan with parchment paper.

Step 2: Mix Dry Ingredients

  • In a bowl, whisk together flour, baking powder, and salt. Set aside.

Step 3: Cream Butter and Sugar

  • In another bowl, beat butter and sugar until pale and fluffy.

  • Add eggs one at a time, beating well after each.

  • Mix in orange zest, juice, yogurt, and vanilla until well combined.

Step 4: Combine

  • Gradually add the dry ingredients into the wet, mixing just until smooth. Don’t overmix.

Step 5: Bake

  • Pour batter into the prepared pan.

  • Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

  • Let cool in the pan for 10 minutes, then transfer to a wire rack.

Tips:

  • For extra flavor, brush the warm cake with a little orange syrup (equal parts juice and sugar simmered together).

  • Use Greek yogurt for a denser texture or regular yogurt for a lighter crumb.

  • Dust with powdered sugar or drizzle with a light glaze for a simple finish.
