Ingredients

  • 200g pasta (spaghetti or fettuccine)

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 1 cup mushrooms, sliced

  • ½ cup heavy cream (or coconut cream for vegan)

  • ½ cup grated Parmesan (or nutritional yeast for vegan)

  • Salt & pepper to taste

  • Fresh parsley for garnish

Directions

  • Cook the pasta: Boil water, add salt, and cook pasta until al dente. Reserve ½ cup pasta water. Drain and set aside.
  • Prepare the sauce: In a pan, melt butter and sauté garlic until fragrant.
  • Add mushrooms: Stir in sliced mushrooms and cook until softened.
  • Combine ingredients: Pour in heavy cream, reserved pasta water, and Parmesan. Stir well.
  • Toss in pasta: Add cooked pasta to the sauce and mix until coated. Season with salt & pepper.
  • Serve: Garnish with fresh parsley and extra Parmesan. Enjoy!
